There are several reasons why Criston finally broke down and decided to beat up Joffrey in the middle of the wedding dinner.

All of these things weighed on him throughout the episode, and his conversation with Joffrey was the final straw. Not knowing how to control his emotions, Criston ends up beating Joffrey at dinner and kills him.
